There really isn’t a recipe for this Colorado miner’s meal. It’s been handed down in my husband, Don’s, family for a few generations. Some of his grandfather’s and great-grandfathers were miners and they had the opportunity to learn a few tricks from their Latino co-workers.
In fact, just a few years ago, we discovered that one of Don’s great-great-grandmothers was Mexican. So now we all enjoy the dish even more. : )
Even though there isn’t really a recipe, I’ll share how it’s made and eaten. Please note, that until I came along it was made with hot green peppers and a few jalapenos. In fact, as it passed around the table people’s eyes watered. They would put salt on it just before eating so that it was edible. However, being the gringo that I am I have adjusted it so that I can eat it. You do what works for you. ; )
Green Chili Pancakes
Brown about a pound of hamburger
Add lots of chopped onions and cook till onions are done
Add salt and pepper to taste
Add a bunch of chopped green chilies. I choose mild. No jalapenos. With one pound of burger, I usually use one or two small cans of chilies.
If I am making a big pot for a party or family meal, I use a large can. I usually add some of the liquid to the meat mixture but not all of it. I save and freeze the rest to put into my taco soup. : )
Add a couple of tablespoons of flour and brown it all together.
Because I do not appreciate the bland color of this dish, I add 1 or 2 teaspoons of Kitchen Bouquet. This can be found in any spice aisle and is used in cooking for color. It doesn’t have much of its own flavor. I also use it in stews and soups. I don’t want my chili brown but I also don’t want it pale. : ) Experiment.
Add enough warm water to make a nice thick gravy consistency. Continue to cook until it is all blended and has thickened up.
Here is a trick – If you add too much water and need to re-thicken don’t use flour. It causes lumps. Use a tsp or two of cornstarch. Add to your chile and then bring to a boil. Voila, a thicker chili. How do I know this, lots of trial and error? : )
Make a stack of pancakes just as you normally would. Serve them hot on a plate and spoon the chili over them. Then be brave and take a bite. If you like Mexican food, then you are going to LOVE this meal.
